Lima beans are a kind of glabrous herb that grows throughout the year. They are usually grown as annual crops. There are two types of seed varieties varying in size.

In one, they are plucked early from the plants and used when they are tender itself. In the second method, they are left to dry up on the plants themselves. The second method is usually followed when they are harvest for their dried beans.
These days, you can find lima beans in every supermarket in the world, including star supermarkets even in India. But, they originally hail from Central America. They are available in three different ways. They are either frozen, canned or dried. They are used in various dishes as major or minor ingredients according to people’s varying tastes. Lima beans are packed with wholesome minerals and nutrients.
These plants are often called butter beans due to their buttery texture. They have a delicate and unmistakable flavour. It is thus believed that this is where lima beans were discovered. The scientific name for lima beans is Phaseolus lunatus.

Since lima beans are available in their dried version, it is easy to buy in bulk when available and store it for a long-term usage.
It must be ensured before purchase that the cans must be sealed well to ensure the retaining of freshness. There should also be no moisture or damage by insects to these cans.
The seeds must also remain whole and should not be cracked.
When choosing fresh lima beans, make sure you choose the ones that are firm, dark green and are shiny. They should also have no spots, wrinkles or yellow skin on them. They are also available in their shelled form.
When buying these, ensure they are fresh and do not have moisture on them as they can easily decay in that case.
Once you bring them home, ensure that they are kept in a cool and dry condition so that they do not catch fungus easily. If you live in moist climates, you should exercise greater caution in their preservation.

I made lima beans a month ago a 16 oz bag, and we had them for dinner, wanted again for breakfast! Got some more, but a 32 oz bag this time. Cooked a couple big juicy cheeseburgers, and had a bowl of lima beans cooked with ham cubes and red unions, lots of black pepper, and garlic salt. It qas realy a good combination with the heavy cheeseburgers. I looked up the nutrition info given, and your info really made me happy, replacing the french fries with something so healthy and easy to cook is just gonna be a regular in the fridge thing for us now.

for at least past 5 years here in michigan theres been a problem with the large dry lima beans , that ide eaten for 20 years previously without this issue , not softening no matter how long you cook them . a percentage of each bag remains hard and brittle like chalk . so much so that local grocery giant meijers stopped selling them . i still find them at walmart but run into the chalk bean problem here and there . so wondering if anybody knows whats going on ?

Maybe they were old , whenever there is a threat to a disaster the first thing being stockpiled are beans so once in a while those stockpiles are marketed, hence tough old beans. You could try boiling them with wakame that’s an algae which softens though beans and shortens cooking times. Also whenever cooking beans when you add water always add hot water not cold water.
