4. Paprika and Potato Tortilla
Ingredients: 2-3 tbsp of olive oil, 250-300 gm of thickly sliced potatoes with trimmed ends (preferably the new or fresh potatoes), sliced onion, chopped garlic cloves, smoked paprika about 1 tbsp, 2-3 tbsp of chopped parsley and 5-6 large eggs.
Preparation: Olive oil is heated in a frying pan which is non sticky. Onion, garlic and potatoes are fried till they turn tender and then paprika are added and fried for about one minute more.
After beating the fresh or dried herbs into eggs, the seasoning is mixed into it. Once the mixture is ready, it is poured into the frying pan and cooked in very low heat till it is set.
This tortilla is then turned upside down to cook the other side (which was the topside before). It can be then garnished with parsley and then served or eaten.
5. Vegetable baked breakfast
Ingredients: 3 large mushrooms, 9 tomatoes cut into halves, 1 thinly sliced garlic clove, 2-3 tbsp olive oil, 250 gm spinach and 3 eggs.
Preparation: Oven is set with temperature 200c/180c and the mushrooms, tomatoes and sliced garlic are divided into three dishes (ovenproof) and kept in the oven and some seasoning is added.
Also the olive oil is drizzled into it. At the same time, spinach is put into a colander and about a kettle of boiled water is used for wilting it.
Spinach is then added to the dishes in the oven and after making space in the oven you can crack the eggs into it.
You can then cook it until the egg is fully cooked as per your choice.
6. Baked Eggs with Spicy Tomato
Ingredients: 1-2 tbsp olive oil, 2 chopped red onions, finely sliced red chilly (preferably deseeded), 1 sliced garlic clove, chopped coriander leaves, 2-3 400gm cans cherry tomatoes, 1-2 tbsp of caster sugar and 4 eggs.
Preparation: Olive oil is heated into the frying pan with a lid and then the garlic, onion, coriander and chili are stirred and softened for about five minutes.
Tomatoes and sugar are then added and bubbled for 8 to 10 minutes until it gets thickened. As per the number of eggs you can then make four dips in the sauce using the back of any spoon.
Crack the eggs into the dips and after putting on the lid you can cook at low heat until the eggs are ready as per your liking.
You can then scatter the coriander leaves and serve or eat with bread (preferably crusty).
7. Grapefruit, Apricot and Orange Salad
Ingredients: 2-3 peeled grapefruits with piths cut away, 4-5 oranges (peeled), sliced and stoned 4-5 apricots and 1-2 tbsp of honey (preferably clear honey).
Preparation: The oranges and grapefruits are mixed into a large bowl and then the apricots are stirred in. Clear honey is also stirred in before serving or eating.
8. Mango, Banana and Clementine Smoothie
Ingredients: 20-22 Clementine, 2-3 ripe mangoes (preferably juicy), 2-3 ripe bananas, 500gm low-fat yogurt and ice cubes (a handful).
Preparation: After extracting the juice of Clementine, it is added or mixed into the roughly sliced mango flesh and the peeled slices of banana.
Ice cubes and low fat yogurt are further added to it and blended until the mixture turns smoothie. It can be chilled in the refrigerator in case you do not mix ice cubes while blending.
9. Smoothie Cubes
Ingredients: Mango, raspberry, strawberry, blackberry, passion fruit or any other fruit that you like.
Preparation: Make a puree of the fruits like mango, raspberry, strawberry, blackberry, passion fruit or any other fruits as per your choice and preferences and then freeze it in an ice tray for a while and then serve it together with plain yogurt and honey.
10. Mango and Passion fruit smoothie
Ingredients: 200 gm peeled and chopped mangoes, 125 gm fat free mango flavored yogurt, 125 ml skimmed milk, 02 passion fruit (halved) and a dash of lime juice.
Preparation: Blend all the ingredients together in a blender until it turns smoothie. You can then serve the smoothie as you like.
